В рамках работы проанализирован спрос с 2018 по 2021 год на безалкогольное пиво, который показывает увеличение потребления пива безалкогольного в 7 раз, рассчитана доля потребления сидра, относительно пива, которая за 4 года увеличилась на 5 % и зафиксировано потребление сидра с 2018 по 2022 г, которое за 5 лет возросло в 7 раз. Проанализирован рынок сидра безалкогольного, а также его аналогов. По результатам анализа рынка безалкогольного сидра отмечено, что данный товар является дефицитным, а производители прибегают к частому употреблению различных вкусовых добавок, с целью усиления органолептических показателей. Ценовой сегмент данного продукта отмечен, как выше среднего по сравнению как с алкогольными аналогами, так и безалкогольными. На основании выявленных данных, следует предположить, что расширение производства безалкогольного сидра является перспективным направлением в пищевой промышленности, поскольку зафиксирован спрос на безалкогольную продукцию, а данный напиток практически не представлен на российском рынке или представлен в высоком ценовой категории.</p></abstract><trans-abstract xml:lang="en"><p>In the process of studying the development of the domestic cider market, an analysis was made of the market for alcoholic and non-alcoholic cider, a shift in demand for non-alcoholic products was revealed, statistics on the consumption of alcoholic beverages were given, in which a decrease in alcohol consumption by 43% was noted. As part of the work, the demand from 2018 to 2021 for non-alcoholic beer was analyzed, which shows an increase in the consumption of non-alcoholic beer by 7 times, the share of cider consumption relative to beer was calculated, which increased by 5% over 4 years and cider consumption was recorded from 2018 to 2022 g, which has increased by 7 times in 5 years. The market of non-alcoholic cider, as well as its analogues, is analyzed. According to the results of the analysis of the non-alcoholic cider market, it was noted that this product is in short supply, and manufacturers resort to the frequent use of various flavoring additives in order to enhance the organoleptic indicators. The price segment of this product is noted as above average compared to both alcoholic and non-alcoholic counterparts.
