Разработка технологий поликомпонентных бифидумпрепаратов, содержащих физиологически активные клетки бифидобактерий с высоким коэффициентом адгезии к слизистой кишечника и продуцируемые ими биологически активные вещества – ферменты, полисахариды, гликопротеины, органические кислоты и др., направлена на расширение ассортимента лечебно-профилактических средств. Многочисленные исследовательские работы подтверждают положительный эффект от комбинирования животных и растительных компонентов в продуктах питания и их обогащение пробиотическими культурами. Соевое молоко характеризуется полным отсутствием лактозы и является незаменимым продуктом детского питания в случае возникновения аллергических реакций, связанных с непереносимостью молочного сахара, вызванные отсутствием или снижением активности лактазы в слизистой кишечника. Лактазная недостаточность сопровождается возникновением аллергических реакций, связанных с непереносимостью молочного сахара, также дисбактериозом, препятствующим формированию нормального биоценоза в кишечнике, и тем самым требуют адекватной профилактики и коррекции препаратами пробиотической направленности. В настоящей работе изучено влияние соевой сыворотки на рост штамма Bifidobacterium infantis 20088. Подобрана доза глюкозы, обеспечивающая максимальную скорость роста клеток бифидобактерий. Наибольшее количество жизнеспособных клеток бифидобактерий наблюдается при внесении 1% глюкозы. В ходе проведенных исследований определен состав питательной среды для производства бактериального концентрата на основе соевой сыворотки. Данный набор жизненно необходимых микроэлементов и витаминов в среде активизирует рост штаммов Bifidobacterium infantis 20088, количество жизнеспособных клеток составляет 1012 к.о.е./см3.</p></abstract><trans-abstract xml:lang="en"><p>Bifidobacteria, as representatives of the intestinal microbiocenosis, play an important role in the mechanism of resistance of the macroorganism to various diseases, are producers of biologically active substances with an immunocorregulating effect. The development of technologies for multicomponent bifidum preparations containing physiologically active bifidobacteria cells with a high coefficient of adhesion to the intestinal mucosa and biologically active substances produced by them – enzymes, polysaccharides, glycoproteins, organic acids, etc., is aimed at expanding the range of therapeutic and prophylactic agents. Numerous research works confirm the positive effect of combining animal and plant components in food and their enrichment with probiotic cultures. Soy milk is characterized by a complete absence of lactose and is an indispensable baby food product in case of allergic reactions associated with milk sugar intolerance caused by the absence or decrease in lactase activity in the intestinal mucosa. Lactase deficiency is accompanied by the occurrence of allergic reactions associated with milk sugar intolerance, as well as dysbiosis, which prevents the formation of a normal biocenosis in the intestine, and thus require adequate prevention and correction with probiotic drugs. In this paper, the effect of soy whey on the growth of the strain Bifidobacterium infantis 20088 was studied. A dose of glucose has been selected to ensure the maximum growth rate of bifidobacteria cells. The largest number of viable bifidobacteria cells is observed when 1% glucose is added. In the course of the conducted studies, the composition of the nutrient medium for the production of bacterial concentrate based on soy whey was determined.
