Крахмал является одним из самых доступных и дешевых природных полисахаридов, но получение на его основе пленок и корпусных изделий осложняется процессами ретроградации, для решения данной проблемы необходимы технологические приемы пластификации, сшивки и компаундирования. Целью исследования является разработка рецептуры для получения пленочного материала на основе крахмала, обладающего удовлетворительными физико-механическими показателями. Объектами исследования были выбраны два вида крахмала – картофельный и кукурузный, в качестве связующих полимеров использовали поливиниловый спирт (ПВС) и желатин, в качестве комплексного пластификатора – смесь мочевины и глицерина в различных соотношениях. Пленки получали методом жидкофазного компаундирования 5% раствора крахмала и 5% раствора связующего полимера, с последующей отливкой и обезвоживанием на воздухе. Прочностные показатели полученных пленок определяли по ГОСТ 11262-2017 (с использованием разрывной машины РМ-50 с программным обеспечением StretchTest), водорастворимость оценивали визуально, сорбционные свойства оценивали через набухаемость по массе (при экспозиции в эксикаторе с водой, t =20°С). Установлено, что использование комплексного пластификатора «глицерин+мочевина» эффективно снижает ретроградационные процессы при получении пленок из крахмала (предпочтительнее использовать картофельный крахмал ввиду большего содержания амилопектина, повышающего эластичность пленок), оптимальное содержание пластификатора составляет 30 масс.ч на 100 мас.ч. крахмала, повышение количества мочевины увеличивает прочность материала, минимальное количество связующего агента (полимера) составляет 20 масс.ч. на 100 мас.ч. крахмала, при этом пленки приобретают гибкость (стойкость к излому), фрагментация пленок при экспозиции в воде начинается при достижении температуры 60°С (до этого пленки набухают, но сохраняют целостность формы), скорость фрагментации максимальна для образцов, содержащих желатин в качестве связующего, сорбционная емкость экспериментальных образцов для водяного пара достигает 120-200 мас.%, при этом у образцов, содержащих в качестве связующего ПВС, наблюдается лучшая влагоудерживающая способность.</p></abstract><trans-abstract xml:lang="en"><p>The development of materials based on thermoplastic starch is relevant when creating eco-safe packaging, as well as promising for obtaining functional materials in other industries. Starch is one of the most affordable and cheap natural polysaccharides, but the production of films and body products based on it is complicated by retrogradation processes, and technological methods of plasticization, crosslinking and compounding are necessary to solve this problem. The aim of the study is to develop a formulation for obtaining a starch-based film material with satisfactory physical and mechanical properties. The objects of the study were two types of starch – potato and corn, polyvinyl alcohol (PVA) and gelatin were used as binding polymers, and a mixture of urea and glycerin in various ratios was used as a complex plasticizer. The films were obtained by liquid-phase compounding of 5% starch solution and 5% binder polymer solution, followed by casting and dewatering in air. The strength parameters of the obtained films were determined according to GOST 11262-2017 (using a RM-50 bursting machine with StretchTest software), water solubility was assessed visually, sorption properties were assessed through swelling by weight (when exposed in a desiccator with water, t = 20 ° C).
