В статье представлены результаты исследования влияния порошка столовой свеклы, используемого в качестве функционального ингредиента, на реологические свойства ржаного теста после замеса, а также на качество готовых хлебобулочных изделий. Проведена комплексная оценка качества обогащенного хлеба по органолептическим, физико-химическим и реологическим показателям. Экспериментальная часть работы базировалась на использовании современных приборных методов анализа, включая фаринограф «Do-corder С3» для контроля процесса замеса и структурометр СТ-2 для точного измерения вязкости теста, что обеспечило высокую достоверность полученных данных. В ходе исследования варьирование дозировки порошка столовой свеклы (от 0 до 8% с шагом 2%) позволило всесторонне изучить его технологическое действие. Установлено влияние дозировки порошка столовой свеклы на реологические показатели ржаного теста после замеса. Выявлено, что добавление порошка закономерно увеличивает водопоглотительную способность муки и количество механической энергии, необходимое для замеса, что свидетельствует о структурирующем влиянии пищевых волокон свеклы. Наиболее оптимально введение порошка в количестве 6% от массы муки. При этом значении эффективной вязкости составляло 145 кПа*с, а также зафиксированы наилучшие показатели газообразующей способности теста в процессе брожения, что напрямую коррелирует с конечным объемом и структурой пористости хлеба. Показано, что оптимальная дозировка порошка в 6% позволяет не только улучшить потребительские свойства изделия, но и обогатить его состав биологически активными веществами, при этом физико-химические показатели (пористость достигла 63%, удельный объем — 1,85 см³/г) соответствуют и даже превосходят контрольные значения. Результаты работы представляют практический интерес для разработки новых видов функциональных хлебопродуктов на основе ржаной муки и могут быть рекомендованы для внедрения на предприятиях хлебопекарной промышленности с целью расширения ассортимента продукции здорового питания.</p></abstract><trans-abstract xml:lang="en"><p>Increasing the nutritional and consumer value of bakery products through the introduction of functional plant ingredients is a key trend in the development of the baking industry. The article presents the results of a study on the effect of beetroot powder, used as a functional ingredient, on the rheological properties of rye dough after kneading, as well as on the quality of finished bakery products. A comprehensive assessment of the quality of enriched bread was carried out based on organoleptic, physico-chemical, and rheological indicators. The experimental part of the work was based on the use of modern instrumental analysis methods, including a "Do-corder C3" farinograph to monitor the kneading process and a CT-2 structure meter for precise measurement of dough viscosity, which ensured high reliability of the obtained data. During the study, varying the dosage of beetroot powder (from 0 to 8% in 2% increments) made it possible to comprehensively study its technological effect. The influence of the beetroot powder dosage on the rheological parameters of rye dough after kneading was established. It was revealed that the addition of the powder regularly increases the water absorption capacity of the flour and the amount of mechanical energy required for kneading, which indicates the structuring effect of beet dietary fiber. The most optimal introduction of the powder is in an amount of 6% by weight of flour. At this value, the effective viscosity was 145 kPa*s, and the best indicators of gas-forming ability of the dough during fermentation were recorded, which directly correlates with the final volume and pore structure of the bread. It is shown that the optimal dosage of 6% powder not only improves the consumer properties of the product but also enriches its composition with biologically active substances, while the physico-chemical parameters (porosity reached 63%, specific volume — 1.85 cm³/g) meet and even exceed the control values.
