Была разработана и апробирована пятибалльная шкала органолептической оценки качества кулинарных изделий из гибрида африканского сома. На основании полученных результатов квалиметрической оценки установлено, что комплексный показатель качества рыбной кулинарной продукции из африканского сома находится на высоком уровне и составляет по мнению экспертной группы 4,85 для изделий из мороженного сырья и 4,77 для продукции из замороженных полуфабрикатов в соответствии с пятибалльной шкалой. По результатам дегустационного анализа неподготовленными испытателями, установлено, что качество исследуемой продукции из мороженного сырья во всех возрастных группах (20-34, 35-55, 56+ лет) характеризовалось как «отличное» при Q=4,35-4,80, замороженных полуфабрикатов 4,63-4,69. По данным корреляционного анализа можно сделать вывод о взаимосвязи между интегральной оценкой и показателями «текстура» (r=0,73) и «сочность» (r=0,73), в изделиях из мороженного сырья, что свидетельствует об их определяющей роли в формировании потребительских предпочтений продукции, а для продукции из полуфабрикатов играют определяющую роль такие репрезентативные характеристики как «цвет продукта» (r=0,66) и «текстура» (r=0,53) и именно эти характеристики демонстрировали наиболее тесную связь с интегральной оценкой.</p></abstract><trans-abstract xml:lang="en"><p>This article presents the results of an assessment of the organoleptic characteristics of culinary fish products made from the fillet of the hybrid African catfish Clarias gariepinus by experts and untrained panelists. A five-point scale for the organoleptic quality assessment of culinary products made from the hybrid African catfish was developed and tested. Based on the obtained results of the qualitative assessment, it was established that the comprehensive quality indicator of culinary fish products made from African catfish is high and, according to the expert group, amounts to 4.85 for frozen products and 4.77 for frozen semi-finished products, according to the five-point scale. According to the results of tasting analysis by untrained testers, it was established that the quality of the studied products from frozen raw materials in all age groups (20-34, 35-55, 56+ y.o) was characterized as "excellent" with Q = 4.35-4.80, frozen semi-finished products 4.63-4.69.
