В статье приведен анализ структуры переработки крахмалсодержащего сырья в РФ. Отмечен рост объемов переработки кукурузы и пшеницы, однако доля перерабатываемого картофеля остается низкой (менее 4 %). Установлено, что по качественным показателям крахмалы и сахаристые продукты из крахмала российского производства не уступают лучшим европейским образцам и являются конкурентоспособными. Потребность рынка в кристаллической глюкозе для пищевых и медицинских целей (более 30 тыс. т в год) полностью покрывается за счѐт импорта. Объем импорта модифицированных крахмалов составляет более 80 % к общему объему потребления. Наибольший объем импорта среди нативных крахмалов принадлежит картофельному крахмалу – более 60 %. В статье приводятся предложения по импортозамещению данной крахмалопаточной продукции. Рост производства крахмалопаточной продукции в России сопровождался концентрацией производства на крупных предприятиях. Так, в 2013 г. свыше 90 % крахмальной патоки выработано на шести предприятиях, более 80 % сухого крахмала – на пяти предприятиях. Эффективность переработки зерна кукурузы и пшеницы на крахмал и крахмалопродукты в значительной мере достигается за счѐт выработки и реализации ценных побочных продуктов (глютен сухой, клейковина, кукурузный зародыш или кукурузное масло, кукурузный экстракт, кормовые продукты). Развитие производства сахаристых продуктов из крахмала с целью импортозамещения может быть достигнуто за счет расширения сфер потребления разных видов крахмальной патоки и выпуска глюкозно-фруктозных сиропов как полноценного сахарозаменителя, обеспечивающего импортозамещение сахара, глюкозы кристаллической пищевого и медицинского назначения, более глубокой переработки глюкозы в полиолы (сорбит, мальтит), полилактиды, аминокислоты.</p></abstract><trans-abstract xml:lang="en"><p>Summary. The analysis of structure of starch containing raw materials processing in Russia Federation is provided in the article. There was noted an increase in volumes of corn and wheat processing, however the share of processed potato is still low (below 4%). It was established that Russian starch products and starch sweeteners are on the same level on quality as best European samples and they are very competitive. Market demand in crystalline glucose for food and medical purposes (over 30 thous. tons) is fully covered by import. The volume of import of modified starches exceeds 80 % of total consumption. The biggest volume of import among native starches belongs to potato starch – over 60 %. The article provides suggestions on import substitution of mentioned starch products. The growth of starch production in Russia was accompanied by concentration of production at large enterprises. So, in 2013 over 90 % of glucose syrup was produced at six enterprises, over 80 % of dry starch – at five enterprises.
