School food system as the largest food system

Abstract
The school food system (SFS) is the largest one in the Russian Federation. (39000 school canteens and 41000 in preschools). It includes production of food raw materials and culinary ingredients, planning and logistics, cooking technologies, government management of food production and provision to a whole range of population (17.6 million students), scientific and medical assessment of the usefulness fullness of school nutrition, commodity assessment of the quality of food. For the food industry and agro-industrial system SFS is one of the main customers and data source for planning, innovation and logistics. On all of its levels SFS needs a management system, implemented on information technologies. The article provides a description of the school nutrition system from point of view of scientifical monitoring at the Federal level, obtained during the organization of the Nutrition Monitoring System for Students and its operation in 2021-25; the most common features of the SFS organization (such as stability of the products range in 80-120 items in main menu and 10-30 items in in snack buffet, on which accounts 3-6% of the turnover, availability of consumption norms, etc.), differ it from other catering sub-sectors, with the main Regulation Acts references. Conceptual connections with other food production sectors are illustrated. A classification of management levels in SFS is provided for future functional modeling. The need for a personalized menu for more then 75000 students has been substantiated.
