A study of the influence of crushing modes of fruit and vegetable waste on the preservation of heat-labile components of the original raw materials

Abstract

In recent years, the Federal Service for Supervision of Natural Resources and Environmental Protection of the Russian Federation has recorded an alarming trend of increasing the mass of plant-based waste and decreasing the mass of fruit and vegetable waste in retail, which has been returned to the food chain as secondary products. Currently, the majority of fruit and vegetable waste is being excluded from circulation by being disposed of in landfills, which is economically unprofitable and has a negative impact on the environment. At the same time, fruit and vegetable waste is rich in vitamins, antioxidants, dietary fiber, and minerals, which means that it can be further processed into valuable products for the national economy, such as feed additives for productive animals. The main goal of recycling fruit and vegetable waste is to ensure the safety of the resulting secondary product while preserving the nutritional value of the original raw material. This problem can be solved by treating the shredded waste mass with chemical disinfectants and avoiding heat exposure to the raw material during shredding. As a result of the conducted research, it was found that when fruit and vegetable waste is chopped in a cutter with a cutter knife rotation speed of 1100 rpm and a chopping duration of 4 minutes, the resulting chopped mass becomes a homogeneous suspension that does not separate for 25-30 minutes, and the temperature of the suspension does not exceed 35 ℃, which allows the thermolabile components of vegetables and fruits to remain at their original levels and ensures the effectiveness of waste treatment with a chemical disinfectant.
