Сравнительная эффективность пищевых покрытий для плодоовощной продукции на этапах товародвижения

Аннотация
Яблоки относятся к скоропортящимся климактерическим плодам с высокой постуборочной физиологической активностью, вследствие чего послеуборочные потери в России достигают 35 %, а для сорта Голден Делишес при нарушении температурных режимов — 40 %. Одним из перспективных направлений снижения потерь является нанесение пищевых полимерных покрытий, формирующих на поверхности плода барьерный слой, который регулирует влаго- и газообмен и ингибирует дыхательный метаболизм. Целью работы являлся сравнительный анализ функционально-технологической эффективности пищевых покрытий на основе хитозана, карбоксиметилцеллюлозы (КМЦ) и поливинилового спирта (ПВС) при поверхностной обработке яблок сорта Голден Делишес. Исследовано семь составов покрытий, включающих глицерин в качестве пластификатора и сорбиновую кислоту либо препарат йода в качестве антимикробных агентов. Обработку проводили погружением плодов в раствор на 60 с; хранение осуществляли при +4 °C (относительная влажность 85–90 %) и +20 °C (45–50 %). Эффективность оценивали по эмиссии этилена, интенсивности дыхания, времени наступления климактерического пика, твёрдости мякоти, содержанию растворимых сухих веществ, аскорбиновой кислоты, суммарной антиоксидантной активности, естественной убыли и потерям от микробиологической порчи. Установлено, что все исследуемые покрытия снижают эмиссию этилена и интенсивность дыхания и смещают климактерический пик на более поздний период. Наибольшую эффективность показали составы на основе хитозана и КМЦ с глицерином и сорбиновой кислотой (21 и 20 баллов по интегральной оценке против 14 баллов у ПВС и 6 баллов у контроля), увеличившие срок хранения с 45 до 80 суток при +4 °C и с 15 до 27 суток при +20 °C. С учётом сопоставимой эффективности и существенно меньшей стоимости обработки для промышленного применения рекомендован состав на основе карбоксиметилцеллюлозы.
