Abstract
In article the scientific approach to creation of machine food technologies of the future with anticipation of 30-50 and more years is considered. And all today's research works should be carried out, proceeding from development of technical production requirements to the organizationof deserted technological streams of the future. These requirements - result of starting fundamental scientific work (the first step of algorithm) – should underlie formation of an image of the food enterprise of the middle or the end of XXI of an eyelid and beginning ХХII of an eyelid [5].

The article presents the results of studies about the effectiveness of extruding the floury polycereal mixtures; obtained dependence of the operating parameters of the process on the variable rotation frequency of extruder’ auger and humidity value of extruded poly-cereal mixture. It is shown that the dressed metallomagnetic impurity includes low-magnetic particles with low magnetic susceptibility. Removing these particles from the product stream in process of magnetic separation using high-energy rare earth magnets is a challenging task.

The current work analyzes the use of different types of heat exchangers, depending on the technology of production. It is taken the detail analysis of the ways of applicability of various types of heat exchangers, depending on the viscosity of the processed product. Antioxidant activity of milk-plant extract of natural sweetener yakon has been established. To extract yakon solid tubers for the first time as an extractant used ultrafiltrate of cheese whey - a product of the extraction separation of whey. Antioxidant activity of extracts was measured amperometrically yakon on the liquid chromatograph "Colour-Yauza-01-AA."A technique for measuring the content of antioxidant. Based on the results of experimental studies established the force of adhesion between particles of different food dust, as well as between dust particles and the metal surface, have different schego-purity processing. It is established that the force of adhesion to steel surfaces vary depending on the purity of the steel surface-processing. Maximum adhesion is observed at 7 - 8 grade purity-formed metal processing.

In the real work results of the comparative analysis of a new method of hydrolysis-ekstraktsii of polysaccharides from sunflower baskets are given in dynamics with a traditional method in a statics. Advantage of application of an innovative method in the dynamic mode, bringing to a controllable variation of key parameters is shown by production of pectin with high physical and chemical characteristics of a target product. The obtained data give preconditions for development of technology of receiving pectin with low prime cost and adjustable properties.
