Abstract
The paper is studied thermo-moisture treatment of carp on the provisional application of vacuum packaging. The degree of hydration of the carp meat tissues equally depends on the prepackaging, as well as the characteristics of the fluid in the chamber system. With increasing temperature the degree of hydration of meat carp tissue decreases with the reduction of the difference in its numerical values of packed and unpacked samples. Obtained a graph of depence dependence of the speed of carp meat tissue dehydration of the processing temperature. Revealed that the presence of plastic packaging, as well as wetting fluid help reduce the dehydration speed of carp meat tissues.

Consider a mathematical model for thermoelastic plate with free support edges. It is shown that the problem with the rapid degradation is reduced to a closed algebraic system of linear equations and thus obtain approximate solutions in analytical form, which is used to calculate the stresses in the thermoelastic plate.

In this paper we consider approximations of functions using integer shifts of Gaussians – quadratic exponentials. A method is proposed to find coefficients of node functions by solving linear systems of equations. The explicit formula for the determinant of the system is found, based on it solvability of linear system under consideration is proved and uniqueness of its solution. We compare results with known ones and briefly indicate applications to signal theory.

Normal heat loss by insulated surfaces is studied depending on the coolant temperature.The corresponding calculating equations is studied. Biosynthesis conditions of β-mannanase enzymes have been optimized by a method of mathematical experiment modeling. The experimental tests have confirmed the effectiveness of optimization based on mathematical modeling of the experimental method of least squares. In this case, the activity of β-mannanase synthesized by Trichoderma harzianum was 564.0 U / mL, which is higher than the activity of the enzyme in the control environment at 2.7 times. Specific energy consumption of the process of cultivation decreased by 12%.
